A Midtown floor can sign a trial and still have no place to put the machine. The counter is pretty. The outlet is on a lighting circuit. The drain is a hope toward a mop sink. Intern espresso queues are a different NYC story. This is utilities before install.

We will not invent plumbing on a Tuesday. Building engineering, the landlord, and the office have to agree on water, power, and waste before the freight elevator is booked.

Walk the three lines with property in the room

Water: shutoff, pressure, and whether the line is potable at that wall. Power: dedicated outlet, not a power strip behind a fridge. Drain: a legal connection, not a bucket. Photograph each. If any of the three is missing, the install is not late. It was never ready.

Freight is a fourth constraint

Bean cases and a machine do not ride a passenger elevator at 8 a.m. next to clients. Book freight. If the building has no freight, say so before we quote. That is a different post. Utilities are this one.
